Brown Butter Apple Blondies

Looking for a quick treat to welcome fall? These blondies are suuuper cozy, easy, and of course they’re delicious. I made them with Trader Joes new gluten free all purpose flour just to try it out and they turned out great, although I would imagine they’re even better with regular AP flour (an easy 1:1 substitution).

These blondies were cakey, dense, and chewy around the edges, with little pockets of baked apples throughout and a sugar crust that shatters beneath your teeth… they’re so good. Give them a go this weekend as we gear up for full pumpkin spice season.

 
 

Brown Butter Apple Blondies

Servings: 8-12

Ingredients:

  • 1¼ cups Butter, salted

  • 2 cups All-Purpose Flour or Gluten Free All Purpose Flour (I used Trader Joe’s, I’m sure Bobs Red Mill 1:1 would work well also)

  • 1 tsp Baking Powder

  • 3 tsp Cinnamon, divided (I used Oaktown Spice Shop’s Saigon Cinnamon)

  • ½ tsp Salt

  • 2 cups Brown Sugar, packed

  • 2 Eggs, room temperature

  • 2-3 small/medium Apples, peeled and diced

  • 1/3 cup Granulated Sugar

Instructions:

  1. In a medium to large saucepan melt the butter over medium heat, stirring occasionally. Cook until the butter foams and the solids turn a medium brown, then remove from heat, immediately transfer to a shallow container, and put in the fridge to cool completely and solidify (about 30-60 minutes).

    • Stir occasionally while cooling. The brown butter should be solid and somewhat firm yet creamy.

  2. Preheat the oven to 350°F and grease an 8x8” baking dish or line with parchment.

  3. In a medium bowl whisk together the flour, baking powder, 1 tsp of cinnamon, and the salt, and set aside.

  4. In the bowl of a stand mixer fitted with a paddle combine the brown butter and brown sugar on medium low to combine. Add the eggs one at a time and beat until smooth and creamy, followed by the vanilla extract. Add in the dry ingredients and mix on low until almost combined, then stir in the diced apples by hand until incorporated.

  5. Turn the dough out into the prepared baking mixture and spread into an even layer.

  6. In a small bowl mix together the granulated sugar and remaining 2 teaspoons of cinnamon. Sprinkle the cinnamon sugar on top of the blondies until fully coated.

  7. Bake for about 35-40 minutes until browned and a toothpick inserted comes out with a few moist crumbs- even a little bit of fudgey batter is ok.

  8. Let cool completely before cutting and serving.
